Chocolate Chip Meringues 2 egg whites1/2 cup white sugar 1 teaspoon vanilla 3 tablespoons unsweetened cocoa powder 1/2 cup semisweet chocolate chips Preheat oven to 250* Beat the egg whites until soft peaks form. While beating, gradually add the sugar until stiff peaks form. Blend in the vanilla and cocoa on low speed and then fold in the chips with a spatula. Drop small spoonfuls onto a cookie sheet (lined with parchment paper). Bake for 1 hour. Turn off the oven and leave them in the oven for another 2 hours. Store in an airtight container.
